Getting my new Galaxy Nexus tomorrow from Google Play. How do I transfer/load all my Nexus S stuff to the Galaxy Nexus?

Contacts will/should be backed up thru Google and when you sign in during initial setup on the new phone they will all load back in.

Apps are also backed up thru Google and will all re-download once you sign in to your Google account

Text messages need to be backed up on your own - if you're interested in keeping them. There are certain messaging apps that have their own backup services (I don't believe the default messaging apps do). It will export an .XML document, and you can save that somewhere (like on your computer) and then transfer the file to your new phone to restore the text messages.
 
Wil the data associated with various apps come along? For example all my workout records in my workout app.

Will my music (Play Music) and photos (Gallery) transfer by themselves?Some of my music got into my Nexus S via non PlayMusic sources (e.g. from original music CD)

Bookmarks?

Is it really as simple as signing in on the new phone?

Not many apps actually bring over data when they're re-downloaded. If you need to have the app data for sure, you need to back those up yourself.

Gallery isn't backed up unless you use auto-upload to Google+.

Play Music only syncs if its listed in your Play Music online. You can easily check what's available and connected to your account vs. on your device locally. Anything you want to sideload to the phone you can do so at your discretion just like any other phone.

Bookmarks are synced to your account if you've set it up.

App data will need to be exported and moved manually. Most of those apps should have a feature to save a backup/restore file. Just do that and transfer the files to your computer, then from the computer to your new phone.

Play Music is stored by Google - no need to worry about that.

All your pictures will need to be saved on your computer and moved manually as well. Look in the "DCIM" folder.

Yes, most of the stuff really is that simple. Part of the beauty of Android and utilizing all of Google's features.
