I was on contract with at&T and bought the Note 2 off contract... does doing that now take me off contract?

Buying off contract doesn't lock you into a new 2 year contract. You still have to finish your current contract.

Crap... that makes little to no sense. Oh well, thanks.

How so? You're in a contract and have to finish it out (unless you terminate early). Buying a device at no-commitment doesn't negate that.

Correct. Not sure why op would think it makes no sense. You are under contract for the original phone you bought at the subsidized price regardless of new device. Only way to get rid of contract would be to terminate, pay prorated ETF thenbuy at full retail/establish new account.

Right. Which is why you get a contracted phone for cheaper. You end up making up for the cheaper price over those two contracted years eventually.
