Is it just me or is this android pie too similar to apple? I love the customization android used to offer.....
1. The ability to use a third party text app that allowed differenr notification icons per individual.
2. The ability to use a third party email app to have a different notification app per email account.
3. To use free themes as often and for as long as I like.

I can do this on my Pixel 2 XL running Pie

You have a Samsung? Your issue is with Samsung, not Android or Pie. Samsung significantly modifies the OS for deployment to its devices.
 
For texting I use Textra and you can customize notifications per contact/conversation including tone and icon. I'm not sure about the themes because I use premium/paid ones, not sure if there is a difference between the two. And I use Nine for my email, and I have 2 accounts and the notifications for each are grouped separately. I just upgraded to Pie 2 days ago. All still work the same.

I rwad on here that if you upgrade textra you will lose the ability to customize notifications. For your email, are the notification icons different?
 
For email the icons are not different. Textra lost the ability to change the icon color, so instead it added the ability to change the icon symbol either globally or per contact.
