So I am really loving this phone, but I noticed (at least on mine) that the screen of the Note 8 is so much warmer than my previous S8+.
It's not a major deal but has anyone else noticed that or just me?

Go to settings, display, screen mode. Select Adaptive Display. Scroll to bottom and adjust the cool/warm slider.

Forgive my ignorance on the subject, but which setting would make whites appear "whiter"? They seem a bit off to me.

I thought my Note screen was warmer than my S8+ but I went into a Samsung store this week to compare. My display was exactly the same as all the demo units. Funny, since seeing that it doesn't seem warm anymore!

Depending on what lights you look at the screen in things always look a bit different. My friend at work had his iPhone 7 plus beside my Note 8 and the screens looked identical although he thought my screen was much sharper, very interesting to see actually for another reason as the ratio seems very similar width the exception of having more content flow to the end of the Note 8 screen then what you can see on the iPhone 7 plus.

Check your screen settings to see if your blue light filter is on. Usually you schedule it, but there's an option to leave it on all the time

Blue is cool. Red is warm. If the display is reddish, turn down the red, and turn up the blue. Green is just more to your taste. I also found the Note 8 color to be substantially warmer than my S8+ screen, so I definitely adjusted it to a more bluish color.

I'm asking what warmer and cooler mean? If the screen is "cooler" would that mean whites are whiter?

Yes cooler being blue or warmer being more red. The preference will be yours but you can infinitely modify this until you figure out what you actually like. I like to have my phone in cinema mode. But now and then I put it in adaptive mode to customise.
