Is there a way to get rid of the whole interruptions/priority setting and just be able to set my phone to silent like it was before the update?

Which phone? This generally can't be avoided with Lollipop. You can always set it to Vibrate Only, but one of the common Lollipop complaints has been the lack of a true Silent Mode.
