yes it wipes everything, just get som sort of backup app like titanimum backup worked great for me overclocked to 1.6 now with a custom kernal.

Which kernel did u use? Also, do I need to have a microsd card to back my stuff up or just back it up within the internal drive of the tablet?

I'd back your stuff up to the microsd card.. as the tablet's memory will get wiped.

there's only one kernel that work for 3.1 as of now. search for Clemsyn-Blades kernel
