Both of my Android phones launch audio apps like Iheart, Sirrius, etc. when a notification is received from another app. Even if the app is closed, it starts playing the last thing I was listening to. It's really annoying, is there any way to prevent this?

Welcome to Android Central forums. Without more information, it is difficult to "guess" what it might be but I imagine it is the resume media option that some devices have.

Disable Media Resumption in Android Settings
This prevents Android from remembering the last played media and trying to "help" you resume it.

  • Go to Settings on your phone.
  • Tap on Sound & vibration > Media (or Sound > Media).
  • Toggle off "Pin media player" or "Show media recommendations" (the wording varies by phone manufacturer).
If this is happening when connected to an external device, BT speaker / headphones / car audio, it could be the "allow external devices start audio" setting again that some devices have. To disable this feature on most devices follow these steps that I found at Google.
Disable "Allow External Devices to Start Playback"
If this happens often in your car, the issue is that your phone is accepting a "play" command from the vehicle's Bluetooth every time a notification arrives.

  • Open the app that keeps playing (e.g., SiriusXM, iHeartRadio).
  • Go to the app's internal Settings.
  • Look for an option labeled "Allow external devices to start playback" and turn it off.

There may be other possibilities but we need more information to offer other advice. Let us know what you find for more advice.
