Permission from game app

I noticed some of the games I am playing are asking for permission into my gallery. Why it is required? Does that mean not only what picture I'll post in the game but it will look through all of my photos I have saved on my phone?

Take away the permission and see if the game still works. If it complains you have no choice if it doesn't enjoy the game without the worry.

You can't give permissions to only certain pictures in Android, it's all or nothing. It's not spying.
