So, I've uploaded a day's load of pictures to Photos, but then spend the evening editing on my phone.'s gallery app. Do those edits get saved to Google Photos in any way? The help file offers this:

Syncing: Any changes that you make will be mirrored on every synced device. For example, if you edit and save a photo on your phone, it will look the same on photos.google.com

But that refers to edits made in Google photos. I'm preferring the editing on my Mate 20 at the moment. The only way I can see is turn off auto-upload in order to edit which is a shame.

Has anyone got any advice?

If the edits are saved to a folder being synced to Photos, yes. If you're overwriting the original picture, I'm not certain if Photos checks for the change in filesize and timestamp or if it just goes by filename (would have to try it out tomorrow). If it does notice any change in the file, then yeah, it will sync (again, as the location is a synced one and not just a manually uploaded file). If it only goes by name, then it won't sync the edits unless you save them with a different name.

Most phones and apps take the picture from the Camera folder (synced by default with Photos) and then save the edited copy either to the same folder (you'd see the original and edited copy on Photos , too) or to a separate folder for Edits or whatever the app's name is. These folders are NOT synced by default and you must select them manually in Photos so that they, too, sync with your cloud storage.
