Photos look like crap with auto-retouching

I am not sure when this started, but it wasn't like this when I first got my S10 about a year ago. A software update of some kind auto-retouches photos so they look nothing like they do in the screen preview. Basically makes everything look like a bad HDR image and takes out all the contrast of the photo.

I've tried the following with no luck:
-turning off HDR completely
-turning on HDR (apply when needed)
-turning off Scene optimizer (bixby)

I tried to recreate this with a before and after image of what I am talking about. The image on the left is what it looked like when I took the picture, the image on the right is after it got HDR'd to hell and took out all the contrast.

The frustrating thing is the photos usually look great on the screen preview and I wish they turned out exactly like that.

I tried to google this issue, but came up empty, so I thought I'd ask you guys here. Any help?

If you'll notice, the radiator under the seat, in the first picture is just dark, in the second one it's visible as a radiator. The glare spot in the first picture - first window, the top or the other car - isn't glaring as much in the second one. Most users don't know what HDR is, so they never use it. Maybe Samsung thought it should always be "a little bit on" to improve the dynamic range even for users who had no understanding of it?

Not being an expert by any stretch but is it possible the "white balance setting is skewed?
