I have a pixel 2 and my signal has LTE with an x at the end of it. I'm on AT&T and it was working fine now I have no internet. I pulled the sim and did a reboot. Is there any way to check to make sure settings are correct?

If that doesn't do it, bring the phone to an AT&T store and ask for assistance. (You may need a new SIM card - AT&T normally doesn't charge for them), or your account may not be set up right (I've had that happen after having an account with them for a couple of years).
