A bit flabbergasting we never got this outside of the box... But at first I got a third party one from Amazon, but it didn't work--as in my laptop doesn't recognize the hardware and my pixel 2xl and I can't put or take anything out of my phone.. It just charges my phone. I tried my car too, and it still doesn't recognize my phone and the hardware.

I then caved and bought a usbc to USB a adaptor straight from Google's website, but even that doesn't recognize my phone on my laptop, car, or even work phone. What gives? Anyone ever face this?

I can't speak to the car issue since I never connect my phone to my car except via Bluetooth.
How long have you had your phone? Did it work before and then something happened (OS update, etc) that made it stop working?
I've read that USB connectivity can be picky about port selection (ex. some people had problems with USB 3 ports but USB 2 ports worked fine) so you may want to take a look at that.

Have you checked the notifications to select the type of connection? I believe the default is charge only.

If you don't set the USB mode to mtp or such your USB adapter isn't going to work because the device is only looking to charge.

Look for USB Preferences in Settings and check the settings in "Use USB for". If it's "No data transfer" you need to change it or change it after you connect from the notification.
