I am setting up my new Galaxy S23 Ultra, and I see there is a new option to "Protect Battery" life by pausing the charging process at 85%.

I like the idea in general... but why 85%? Why not 95%? Is there a way to change it to 95%?

Thanks for any insight on this new feature.....

This is one of the go to articles from the people that test these things.

Starting around Figure 6 they get into how limiting the charging capacity influences longevity. Basically, li-ion batteries prefer a happy medium for the best overall life span. The more you stray from a medium charge, the more power you get per charge at the expense of shorter overall life. Since no one wants to plug and unplug that often, limiting the charge to 80-85% (and draining to 30-40%) has become something of a guideline to balance usable time between charges with the reduced life associated with higher charge levels.
