I've flashed ROMs but this will be my first time flashing kernals as well, so forgive me if this is a stupid question. If I do a Nandroid backup before flashing kernals, will going back to the backup get rid of the kernal if I don't like it, or will I have to install the ROM again?

a nandroid will backup your kernel

a very crude summary:
flash ROM A
(assuming you want a different one other than included with ROM) flash Kernel 1
nandroid backup ROM A
flash new ROM B & new kernel 2
hate the new ROM B
flash nandroid backup of ROM A
enjoy ROM A & Kernel 1

***just in the event you didn't already know***make sure the ROM supports the kernel you want to flash. it can seriously damage your phone if it's not compatible. it might not be specifically listed, but for example don't use an AOSP kernel on a SENSE based ROM
