Is there a way to increase the screen sentistive? I remember watching a video about it on the Note 4 and was wondering if the Note 5 still has it.
 
Yup, you have that option here as well (for when you're using gloves). Just bear in mind that this setting also depletes your battery faster and can result in very funny, unexpected 'touch actions' in certain environments like extra humid or too windy.
 
If you enable that, you can block certain keys from working and you will be able to set a 'dead zone' in your screen, which will not respond to touch input until you turn off Interaction Control (once it's active, you turn it on and off by pressing/holding Home + Vol- ).

It helps if you need to grip your phone from, say, the bottom of the screen, but don't want to be constantly activating touch actions there, or if you press your palm on a certain section to help with typing or note taking but don't want the palm to be recognized as touch input.
 
PS: I could have sworn it was there... but now I can't find it! So nope, my Note 5 doesn't have the touch sensitivity feature anymore :(

BUT I've tried using a double-fold from my shirt on my finger and it still registers input. So maybe it doesn't need it anymore and it's always on?
 
I think it's always on now because I can still scroll work the charging cord or my finger nail
