is it possible to just remove all boot screens? i know that the phone is loading at this point but...

To answer your question, Yes. I would imagine if you were rooted and had a read/write app like root explorer or astro that you could find the file and remove it. I'm not sure what that would do to your boot cycle. I didn't care for mine, so I just changed them. I ended up installing a custom splash and the boot animation was created by my wife. Now when I turn my phone on, it returns the favor.

well my thinking is if i remove that "stuff" it could shave a second or two off the boot time.. maybe.

Not sure. Splash screens and boot animations are pretty light, and are meant to distract you while the operating system is loading up. Let me know how it turns out, but my guess would be same boot time w/out anything to look at.

Use root explorer (you need to be rooted) and navigate to system/customize/recources. You should find the boot files there. Not using these, you'll boot a still Android screen, or at least that is what happened when I changed to a custom boot, but with a incorrect name.
