If I return a phone within the 14 days that Verizon gives you, and go back to my old phone, will they change my plan back also?

Yes. If you return the phone within that 14 day window, your plan and contract revert back to what they were prior to you ordering the new phone and changing your plan/contract.

Recently I upgraded to the GNex but was having signal issues so I went back to my Bolt. Verizon gave me my upgrade eligibility back with my unlimited data very easily.

They wont give it to you. YOU HAVE TO DEMAND IT.

No you don't, policy is for them to return you to your old device and plan when you reverse your upgrade and return your equipment. The reason I said that you may have to ask for it is because some call center reps are not as thorough as others.
