if I rooted my phone using SuperSU after OEM unlock, so stock rom and recovery just root access, would I be able to apply OTA updates, or sideload them?

You would not be able to take an OTA update. You can flash the factory images with the new update, but that would revoke your root access and you would have to do it again for the new version

Or you can be like most people and not even care about OTAs. You can load a flashable zip within 24 to 48 hours (after someone makes one) or you're on a custom ROM and there will be an update do that shortly.

I think the last time I have taken in the last 4 years is when I turned on my Nexus, out of the box, and it had an update. It probably will be the last for this phone. especially since it's so easy to load any version of Android you want. It's a nexus!

You will not be able to install the OTA but you will be able to side-load them.

You are correct. The bootloader has to be unlocked, but not rooted. See what little sleep will do to you? :-)
:)
Actually, to sideload the OTA file, you don't even need the bootloader unlocked. ADB sideload will work just fine on a locked bootloader - key is - you must not have made any system changes to your phone (it must be stock)
