Did you clear cache for the S Health app?. You can also disable the app to see if it helps.

I did... but I'd really like to switch back to the previous version.. feels so laggy

My pedometer quit working with the S Health. I wonder if the update did it. It quit working before the Lollipop update. I'll try clearing its cache.

How can I switch back to the old S Health (which looked a hell lot better by the way ) , if that's even possible ... ?

Have you tried to Uninstall Updates in the Application Manager in settings?
