So it looks like the galaxy note (phone) you can handwrite an s-memo and automatically link it to an event. I don't see how you can even choose the spen as an input option when entering (only google voice typing and samsung keyboard are available).

Is there some way to add the spen as an input option?

I think I read an article somewhere stating they would be adding this feature at a later date.

This is very specific for the phone but it's very similar in the Note Tablet too -
When you open S Note or Memo, up at the top bar toward the left, select the icon that looks like an old fashioned fountain pen tip. That can be used for writing or drawing. To get the keyboard, I had to hit the Capitol T at the top, and then got the screen to handwrite and have it change to text, or when the handwriting area is there, there's a little keyboard icon at the top of the black area on the right, hit that to open the keyboard. This may operate differently depending on settings so it could work a bit differently for you but I hope it helps you figure out how to do what you want. As for linking it to an event, I opened up S NOTE, and after writing on the note, I opened the menu using the menu capacitive button and there was an option to create an event, when I chose that it gave me a calendar event menu to put in the title, date, etc. For S Memo, there's a link to calendar option under that menu that says new event, new task and link.
