I noticed something while playing around with video. If I keep "super steady" turned off, I have a full array of video options; i.e. 8K, UHD60, UHD30, FHD60, FHD30, and HD30. But as soon as I turn the "super steady" on, the 8K reverts to QHD and the only video options are QHD60, QHD30, FHD60, and FHD30.

Does anyone know why this is? If I shoot at 8K, am I still getting stabilization or is the stabilization the super steady that you have to turn on manually?

Some advanced options (like Super Slow motion, Super Steady, some filters, auto-tracking, etc.) require more processing than the phone can reliably handle for video without skipping too many frames, so using them automatically limits the resolution/fps you can record in. Turning them off will let you use higher resolutions/fps but without using any of those features.
