I turn the power saving mode on for my galaxy s6 all the time. Will it make any difference if I turn it off and use it? Because coming from an iPhone 6 I'm not impressed with the battery life of this phone.

I dont game either. But I do watch youtube videos on my phone as my laptop stopped working. Even if I don't, I don't go past the 3-3:30 hours SOT.YMMV, Why not just try it and see?
Everyone uses their devices differently. I never use power saver as I don't care for a dim screen. I almost always get thru the day, but don't game or watch videos either, the two biggest battery hogs.

Facebook and some other social messaging crap apps are big drainers. Syncing email to often is another. That thread mentions lots of other stuff as well. I get about 4 hours SOT on average and frequently a bit more. What everyone considers normal usage for them is different for the next guy. FWIW, I also reboot every morning after using my S6 plugged in over night as a night clock and morning wakeup. I have always rebooted each morning no matter what device I use. I've had little to no trouble with any phone ever. 90% of the time the battery lasts all day. Anyway, good luck, hope you get it sorted out.
