SCH-i925 - Rooted & unlocked, now what

I followed the method described here and it worked, but now what. I want to be able to use an ATT SIM card rather than VZ. When I insert the ATT SIM I still get an error stating that the SIM card is not recognized as a VZ SIM. I thought 'jailbreaking' was supposed to give me the ability to do this.

I would post on XDA, but I am unable due to a low post count over there. Can someone please give me some help or guidance on this? I even called VZ to ask them how to use it on other networks and I was told it should work, but no one could tell me how. They suggested I contact ATT. I took it to an ATT store and they tried a SIM, but no joy.
