Not sure why it's awkward. I just tried it, and it was every bit as easy as portrait. Just tap volume down and power at the same time quickly

You need to use additional launchers. And launch it via widgets > activities.

I either just tell bixby "screenshot".
or use my Spen as I usually annotate my captures so I remember why I took them out to outline something or draw or Palm swipe. never liked having to use the side buttons but that works too.
