Just bought an 21+ and noticed the security patch date is still April. That was after it ran an update last night. I'm on ATT..does that patch date seem correct?

Nope. Sometimes you just have to check periodically, sometimes, and this has happened to me, I restarted the phone, and suddenly I had 3 updates, consecutively. I'm on AT&T, as well, this was two weeks ago on my Note 20.

Your carrier's website tells you the latest firmware version and security patch level for your phone. If yours isn't up-to-date and OTA update isn't working, you can try Smart Switch on your desktop. If that fails too, you can either download and install manually using Frija and Odin, or contact your carrier's tech support (possibly a waste of time), or switch to a more competent carrier.

Yeah ATT is showing it should be July 1st. I'm going to give it a couple of days before trying anything else...could just be playing catch up since its a new phone...thanks!

My AT&T S21+ shows August 1st for the security patch level and Google Play level

The best way to talk about what firmware update your phone has is to state the firmware version. Different firmware versions can share the same security patch date or Google Play level.

Unlocked S21 Ultras got the AUH9 firmware a week ago, which has the September 1 security patch level:

I'm still on this one which shows to be from the Apr 5 update...

Do you have a link to instructions to do that..I've used odin before but not to flash an update...thanks!

So I called support and they managed to force the May update through and now I'm having to download the later ones one at a time...

Yep...the update that the tech forced was May, as soon as it was complete I checked again and it downloaded the June one and now its installing the July one. Seems like the May update was causing an issue somehow...
