soff.log, mtd-eng.img...can i delete these?

Well I did it! rooted my phone yesterday and loving it! From what I gathered it was safe to delete all the .zip files/folders after the root process was complete...well at least I hope it was safe So now Im wondering if it is safe to delete the "mtd-eng.img" file and the "soff.log file"? I want to wipe my SD card but do not want to destroy anything going on behind the scenes.

I am just now getting comfortable with flashing new .zip files for ROMs and noticed that I am getting my SD card congested with folders. If I use a ROM for a while and perform a back-up do I still need to keep the .zip file for that ROM on my SD card?
