Speech to text for hearing impaired at dinner party?

So, every Thanksgiving my Aunt and Uncle come to dinner. 45 year tradition putting my Aunt pushing 90. She is hard of hearing and drops out of conversations. My Uncle then accuses the rest of the family of being rude and conspiring to keep her out of the conversation. Every. Year.

So this year I would like to use technology for a preemptive strike! I have been playing with GBoard and Google Translate. Wow! Love you Google Guys!

Is anybody aware of a way to keep GBoard recording in Google Docs? I have tested with music in the background and think it would be a huge improvement over my traditional Thanksgiving family gathering.
