From there, you can actually remove a bunch more but you will lose some features. Most google apps can be deleted like; Talk, Gmail, YouTube, Maps, (figure if it can be downloaded from the market you can delete it). A better use of space would be to move updates to /system/app from /data/app and delete the original (beware some have libs that must also be extracted and placed in the /system/lib folder to work like voice search for example). This will earn you more space for user apps. If you usually download a third party launcher like Zeam or ADW or GoLauncher, you can delete Launcher2.apk and push the launcher to /system/app as well.
