How do I keep my hone from staying awake while charging? I can't find the thread that tells how.

Go to Menu, Settings, Applications, Development and then uncheck the Stay Awake box.

Yes the screen stays on while the phone is charging, I find it rather useful.

is there any way to make the screen not dim during this? It won't turn off but it does dim
