From those who have tried them, which do you think is best. I would like a stable fast experience. I don't need features if they come at the expense of this.

Personally I prefer Sense (5) over CM stock, depending on your use you can get faster performance from CM but I've stuck with Sense not least of all due to the superior (in my mind) camera app. Really it comes down to what you like.

Compared to stock Sense ROMs the CM ROM's seem to always have issues. MeanBean was really stable for me and you can overclock with the sticky settings and still get great battery life. I also recommend installing Greenify if you're rooted ans battery life should be amazing after that.
