Terminal emulator questions

I was wondering if there is a way to create a log of every I/O in terminal emulator? I keep getting a lot of error messages in terminal emulator and want to log both commands entered and the outputs given in response without having to write everything by hand then type it back out.

Also, how do I change the system timezone? I'm tired of my files giving the gmt timestamp.
