I have a Galaxy S7 and since the last update (unsure if related) whenever I send a text message, I can see what I wrote because it is white text on blue/green background, but when I receive a reply I cannot read it because it is white text on whitish background. Is there a way to fix this?

Do you have any themes applied? If so, that might be what's conflicting with the now-fixed colors of the messaging app.

You should be able to change backgrounds, fonts, and other text message settings in Text Settings.
As SpookDroid mentioned, if your S7 is running Lollipop or above you have an enormous amount of Themes to choose from that you can apply to your phone, that will change the appearance in so many cool ways. This is what separates Android from iPhone.
You can find Themes in your apps under Samsung Galaxy apps, or you can long press your desktop and find a Themes link there.
Give it a try.
