The best G1 ROM?

I have been given 2 G1's from a friend, one is complete junk the other is in OK shape and Im hoping to get it all ROMed up and give it to the fiance so she has a phone thats better than the crappy flip phone she has now. I still have to get the thing rooted again (ran into some issues with the orginal ROM being all horked up so I had to get it back to factory which was a pain). So here is where I am, I have a phone that is sitting at the setup screen which I have to hack my way around (no T-Mobile in my area). Once I get access to the phone again what is the easiest way to get the phone to a new ROM and what is the best ROM to use for someone who tech stupid. I want it simple but fast and reliable.
