Unable to properly organize photos

Alright so I bought a used phone and transferred my photos over and such by way of copying them to the sim card. However, I am unable to achieve the organization that I desire in the gallery. My organization is like this..

For regular photos
Sim card>DCIM>My_pix

for regular videos
Sim card>DCIM>My_flix

for photos i want hidden sometimes
Sim card>DCIM>other

However, these are not showing up in their respective folders. Instead, everything shows up under "All photos" "All Videos" or "Camera Shots"

In fact, the numbering on the albums even confuses me.

I used Astro to try to organize things but I cannot find a solution. Any assistance would be greatly appreciated.

I think the Sense gallery might automatically organize based on file type. I'm not 100% on that one, though.
