Uninstall Google Pixel Edition?

Hi, I've just made the switch from an iPhone to the Nexus 6P. It's a great phone but I bought it with the Google Pixel interface and I want to know if it's possible to delete the whole thing and have the phone like it was out of the factory.

I'm running 7.1.1 and I can't update de security firmware because it goes through the "jailbreak" while rebooting and I don't know what to do (yet).

Nexus root toolkit will probably be the easiest way for you to go back to stock firmware. Then keep it unrooted with stock recovery if you want OTA updates.

If you're referring to the Google Now Launcher, you can easily install a 3rd party launcher to replace the stock interface without having to reset the phone to factory condition. Some popular ones are:

I'm not quite sure what you mean by this. What 'security firmware' are you trying to update? The monthly security updates?
What is this 'jailbreak' that you're seeing while rebooting?
