Unlocked phone help

Ok this is my situation..... I have an unlocked LG g3 from tmobile but I unlocked now I have it under at&t so when updates come out do I have to wait for the tmobile version or the at&t version

You have to be on TMobile to get updates. AT&T won't update the phone.

If you're going to update it manually, or flash a ROM or custom recovery, treat it as a TMobile phone, because that's what it is. Putting in a different SIM doesn't change anything on the phone itself, only on which towers you connect to.

Why would you want the official update from your carrier over a custom rom? That's literally the biggest perk of having an unlocked phone and boot loader.
