You can run the MR2 RUU which wipes the device and applies the newer radios. It's not the real MR2 (that is whatever comes out next) but it has fixed my reboot issues at the sacrifice of a bit more batter life, or at least it seems that way. I haven't had a single reboot since doing the upgrade on my phone the day it was leaked.
I've been waiting to see what stock gingerbread was like before rooting, but the more we keep getting delays, the more I am thinking about taking the plunge myself. We keep hearing that there will be an update any day now and that it may or may not include gingerbread but narrowing the date beyond "soon" has been next to impossible.
