Updates? Latest Version?

I have unboxed and deployed about 5 EVO's for my employees, and 1 for myself. I have never seen any updates when going to Firmware/Software Updates. I thought they have released some...

Also, my phone (purchased right away) has all sorts of different version numbers under Phone>About than the one I just unboxed today.

What version IS the latest? How can I be sure I am up-to-date?
