So I used to have an unlimited data plan with Sprint and I didn't have to worry about data usage. But now I'd like to buy a Nexus One from Italy and I'll be using a pay as you go plan (in Libya where I'm currently working). So how does this work? Wouldn't all the widgets and other things constantly running in the background be using up data all the time? Will it get expensive?

It'll get stupidly expensive very easily, yes. Using any smartphone without a data plan is not to be recommended, I'm afraid. If you turn off everything that makes your smartphone a smartphone, it'll probably be okay though.
