I'm not rooted, I am stock 4.1.2, but getting prompted to install 4.3.

Can I install the 4.3 upgrade now, and still root later to remove bloatware? I'm finding conflicting info regarding the Knox Bit.

As of now, there's no way to root the 4.3 OTA. Your best bet would be to root your device now and install Titanium Backup. In addition to being a great backup app, it will allow you to remove bloatware and freeze (or remove, if you wish) Knox. Once you're rooted, you can find a 4.3 custom ROM that's to your liking.
