I used to be able to go in the voicemail settings and add a couple of commas and in my PIN number to the voicemail number my S21 Ultra won't let me do that now is there a specific way to do that?

What happens when you open your phone app and go to settings?

I have the unlocked ultra on ATT and in the phone app, sometimes called the dialer, three dots in the corner, Settings>Voicemail, I have the option to view and edit the VM#. It only gives me the option of Carrier for provider even though I also have Google Voice. To get options similar to what you're looking for, with the keypad open, in the lower left there is a *# button that opens to other options.
