Google assistant keeps turning itself on asking what can it help me with, and screens are changing by themselves

Maybe it's the jack? Try blowing in it, or use a toothpick and see if there is any dust in there that you can remove. Also IF you have Bluetooth headphones or can borrow some try using Bluetooth and see if it still happens.

I guess I will have to try bluetooth. The earphones I had been using, now no sound comes through the earphones when plugged in only sound can be heard from the phones speaker instead. The new earphones cause the phone to go nuts changing volume and screens on its own when plugged in.

It definitely sounds like an issue with the jack. It COULD just be dust in there, have you tried lightly blowing in it? Or using a toothpick to see if you can get any dust out of it? It COULD be the headphones too, have you tried a different pair not necessarily Bluetooth?
