Want to switch my S5 to be a Google Play Edition (essentially)

Hi,

So, I've rooted my S5 before and then started deleting Samsung apps (because they suck) to try and get the Google Play Edition (GPE) experience. Doing that basically broke the phone and so I went back to stock.

I've tried searching but could not find much on doing this. Ideally I want to wait for a Android 5.0 ROM to come out for this but what are some of the best ROMs out there to get the experience I'm looking for? I really like Android but Samsung tries its best to ruin the OS.

*Edit - got any recommendations on where to get a AOSP ROM? I found XDA Developers and it seems to be pretty legit but I figured I would get some feedback before spending a few hours downloading a (mostly) random one.

Samsung is shtmaker. At least we could install google play edition to our terrible Samsung S5. But there's no such option.
