is there a way to do away with the UI samsung gives you and just you the Android OS like on the nexus one? I like the simplicity much better.

well first you have to root the phone and then flash a custom ROM for stock 2.2 android thats compatible for the captivate or any custom ROM for a UI that you like.

if you dont want to root you can download launcher pro and tweak the setting until you get the desired effect. there are a ton of settings and tweaks you can make it look like vanilla android or anything you want it changes a lot. good luck!
 
looks like TouchWiz can be turned off on the Epic, not sure if it'll work with the Captivate though. I havent tried it.
 
Well At&t blocks side loading apps for no reason so who knows what else they are taking away from us.
 
you are unable to do this on the captivate the section to restore defaults is disabled :/ o well
