Start with a ROM with some customization built in, ie. AOKP, CM10 or a slew of others. Read up on each ROM and try what sounds good and if it isn't what you are looking for, move on.

To begin with the "Galaxy Guide" might be a better start though. Unless you are familiar with ROMs, terms and features.
