What would happen if I delete the cache?

cAche on my Nexus 7 2013 is constantly increasing it is approaching 1gb what would happen if I delete

Which cache are you talking about? Caches in general are temporary data, so clearing them doesn't lose any important data.

Will I lose my maps information, I mean the app cache that I see in the storage section that is reaching about 1 gigabyte

Are you talking about temporarily downloaded Google Maps? If you clear the entire cache, then yes, you will probably lose that temporary data, but you can always download it again.

If you want to clear caches selectively, try an app like App Cache Cleaner or All-in-One Toolbox.

Apps you use overtime store a small amount of data, so that when you use the app its not constantly loading data. Deleting that just refreshes the app and isn't deleting any data within the app other than it can pre load. Feel free to free up your storage space.
