What're the must have apps for the HTC One?

Power Toggles. It puts power toggles in your notification pull down.

There are literally a ton of "favorite" or "must have apps" threads for the One. But yes, Power Toggles is probably the most useful thing you could find. I prefer it to 4.2's notification toggles.

Right. I don't know why HTC removed the quick settings from the old sense . my old Desire HD has them lol.
