What's the best option for "backup" independent of Google Cloud? I'm talking email, sms, contacts, photos, the works.

Optimally, I'd connect to my windows system via Bluetooth when I walk in the house and backup automatically, although Wifi would work too.

Thanks so much

Joe

Bluetooth is going to be about the worst way to transfer that amount of data because it is extremely slow. You'll need Wi-Fi or USB tethering. The Google Quick Share program for Windows would be a good option. It would use Bluetooth to connect devices (no clue why) but then uses Wi-Fi for the actual transfers.

As for a single program to backup everything, I'm not sure that currently exists.

Samsung PC smart switch backs everything up, but doing Bluetooth or WiFi I could imagine that being painful, depends what OP device they using.
