I downloaded Samsung's Smart Switch and that seems like it would do everything without a hitch but I've read elsewhere that Helium is the preferred method of doing this. Is there any difference between these two apps and, if so, is there one you would recommend over the other. If so, why?

Literally everything gets transferred over with Samsung Smart Switch. You'll get all your apps, contacts, music, pictures--everything--on your new phone. It'll just take awhile.

I wonder if there is a setting as to where you can restore what you want to where you want. For instance, I would like for my apps to go on my internal SD Card. But my music and videos I would want on my external SD card.

I'm not sure. When I used Samsung Smart Switch, it was between a Note 5 and an S6 active.
