Whats the difference between texting and chatting in messages? And why does it should like this?

The phone this is showing on is a moto g power. Why would it change and is there a differnce?

Texting would be regular sms text that's been what we been use to before RCS and chating is with RCS where you can read receipts show typing indicator and over wifi with that user .

Probably connection issue for you or that person default back to sms text

I think RCS requires mobile data, so if your mobile data signal is poor and the phone is just using the voice signal, that might be why it drops down to SMS/MMS.
